Salmon from the cool southern waters of Tasmania is wrapped in parchment with grilled fennel and lemon. Knobs of butter and a splash of white wine within the parcel will emulsify during the cooking process intermingling with the flavours of lemon to produce a wonderful sauce. An accompaniment of crème fraiche that has chives and dill folded through creates a perfect balance.
