About: A chicken dish prepared from the recipe diaries of Mamma Spinola, a native of Madeira Portugal, where we see garlic, capsicum, zucchini, kipfler potatoes and tomato intermingling with the roasting juices of the specially prepared brined organic chicken. A classic Argentinian chimichurri dressing adds another dimension to the chicken to which is served alongside a fragrant saffron rice.

 

Ingredients

Free range chicken, capsicum, zucchini, kipfler potato, garlic, thyme, tomato, basil, black pepper, Himalayan salt, soy sauce, black pepper, olive oil.
Chimichurri dressing: chili, parsley, olive oil, vinegar, fennel seeds.
Lemon dressing: lemon juice, white balsamic vinegar, olive oil, salt, pepper.

Heating Instructions

Chicken:

Remove this sticker
Oven: 180C – lid on bake for 35min, remove lid and bake for further 5min
Pour over chimichurri dressing or leave as a side accompaniment

Saffron Rice:

Oven: 180C degrees – lid on bake for 7min
